RESUMEN

OBJECTIVES: To develop and validate a questionnaire to assess the food safety knowledge, perceptions, and practices (KPPs) of hospital food service staff (FSS) amidst the challenges of the coronavirus disease-2019 (COVID-19) pandemic. METHODS: The questionnaire was subjected to a rigorous evaluation process, which included a literature review and focus groups comprising the general public, FSS, and key experts in food service. The pilot testing highlighted its utility and determined its content validity ratio (CVR). RESULTS: Most items received high CVR scores of 0.96, indicating excellent content validity. A subsequent pilot study involved 40 FSS. Reliability testing, using Cronbach's alpha value of 0.914, demonstrated good internal consistency across the questionnaire scales. The final version consisted of 115 items. CONCLUSION: The developed questionnaire, available in both English and Arabic, exhibits both validity and reliability. It acts as a crucial tool for healthcare facilities to assess food safety KPPs among FSS, both under regular operations and during crises like the COVID-19 pandemic. This tool is adaptable to various hospital settings, aiding in the reduction of foodborne diseases risks.

Although antibiotics growth promoters (AGPs), including zinc-bacitracin (ZnB), can threaten human health due to developing antimicrobial resistance, as well as drug residue in animal and poultry products, ZnB is still widely used, particularly in developing countries, for the sustainability of poultry farming. The present investigation aims to assess the use of Saccharomyces cerevisiae and Lactobacillus acidophilus, with or without a prebiotic (mannooligosaccharide, MOS), as alternatives to ZnB. For this reason, 150 one-day-old chicks were grouped into six groups, designated negative control, LA, SC, ZnB, SA + MOS, and LA + MOS (5 replicates of 5 chicks for each group). Chicks kept in the control group were fed the basal diet. Chickens kept in LA and SC groups received L. acidophilus, S. cerevisiae at a 1 g/kg diet and 2 g/Kg, respectively. Chickens kept in ZnB received ZnB at 0.5 g/kg. Chicks kept in the SC + MOS and LA + MOS were fed a basal diet containing 2 g S. cerevisiae + 1 g MOS/kg or 1 g L. acidophilus + 1 g MOS /kg, respectively. The efficacy was assessed based on the growth performance, carcass traits, meat quality, nutrient digestibility, and blood biochemistry composition during the entire trial 1-36 days of age. Results showed that chicks kept in the SC group had greater BW than the control (p < 0.05). Chicks kept in the SC, LA, SC + MOS, and LA + MOS consumed less feed than the control and Zn-B groups (p < 0.05). Supplementation with S. cerevisiae resulted in a better (p < 0.05) feed conversion rate (FCR) than the control group. Supplementation with L. acidophilus + MOS significantly increased (p < 0.05) the relative liver weight compared to those supplemented with ZnB, S. cerevisiae, and L. acidophilus. In addition, supplementation with ZnB-induced spleen hypertrophy compared to S. cerevisiae and L. acidophilus-supplemented groups (p < 0.05). Plasma, meat, and liver cholesterol, as well as the cholesterol-to-lipid ratio of meat and liver, were significantly decreased (p < 0.05) in both SC and LA groups compared to the control group. Our research indicates that adding 2 g/kg of S. cerevisiae to broiler feed can effectively replace ZnB and enhance productive performance and economic profits, making it a viable and sustainable option for broiler farming.

Chitosan (Cs) was subjected to ball milling and subsequently functionalized with Dinitro salicylic acid (Cs-DNS) to enhance the efficacy of oral insulin delivery. The hydrodynamic spherical particle sizes exhibited 33.29 ± 5.08 nm for modified Cs-DNS NPs. Irrespective of insulin entrapment, zeta potential measurements revealed positively charged Cs-DNS NPs (+ 35 ± 3.5 mV). The entrapment performance (EP%) was evaluated in vitro, and insulin release patterns at various pH levels. The EP% for Cs-DNS NPs was 99.3 ± 1.6. Cs- DNS NPs retained a considerable amount of insulin (92 %) in an acidic medium, and significant quantities were released at increasing pH values over time. In vivo investigations, the diabetic rats which taken insulin-incorporated NPs had lower serum glucose levels (SGL) after 3 h to (39.4 ± 0.6 %) for Cs- DNS NPs. For insulin-incorporated Cs- DNS NPs, the bioavailability (BA%) and pharmacological availability (PA%) were 17.5 ± 0.31 % and 8.6 ± 0.8 %, respectively. The assertion above highlights the significance and effectiveness of modified chitosan in promoting insulin delivery, decreasing SGL levels, and guaranteeing safety.

The response to amino acid (AAs) supplementation on broiler production, carcass and meat traits and nitrogen in the excreta during the early growth period was evaluated. Two experiments were performed during 1-28 d (245 birds, experiment 1) and 1-21 d of age (455 birds, experiment 2). In both experiments, the positive control (PC) diet had 22.5% crude protein (CP) and the negative control group (NC) diet had around 18% CP with the same methionine (Met) plus lysine (Lys) concentration as the PC diet. In experiment 1, the NC diet was fed to the other five groups supplemented with synthetic amino acids, such as L-arginine (Arg), L-threonine (Thr), L-valine (Val), L-isoleucine (Ile) or all these AAs, respectively. In experiment 2, the NC diet was formulated to contain 18% CP with either corn-soybean meal and animal protein or with only vegetable protein. Both NC diets were offered to the other ten groups with synthetic amino acids such as L-Arg, L-Thr, L-Val, L-tryptophan (Trp) or a combination of all these AAs plus L-isoleucine (Ile), respectively. In conclusion, broilers fed 18% CP supplemented with DL-Met plus L-Lys showed lower performance and a European production efficiency value (EPEV); Arg, Thr and Val addition improved growth, the feed conversion ratio and EPEV of the diets containing animal protein only, but broiler performance and EPEV was lower than with PC, indicating that DL-Met, L-Lys, L-Arg, L-Thr and L-Val supplementation may be limited in low-protein diets. Furthermore, a low-protein diet supplemented with amino acids did not affect the survivability of broilers up to 28 days of age.

Food safety is a critical problem that impacts everyone worldwide. Many countries around the world are becoming increasingly reliant on the availability and safety of their food supply. Despite growing public consciousness about food-related dangers, the growth in food poisoning cases implies that individuals continue to make food consumption, food storage, and food preparation decisions that are less than optimal from a health and safety standpoint. The aim of this study was to assess Saudi Arabia's households' knowledge and practices of food safety. A cross-sectional study was conducted to assess knowledge of food safety and practices among a group of households in Saudi Arabia. An online questionnaire using social media (Facebook, Twitter, Instagram, and WhatsApp), and emails communications were distributed. A total of 309 adults (age range 18-59 years) participated in the study. In general, there were no differences between regions regarding the knowledge of food safety. Additionally, most of the participants had good practices of food safety. The findings of our study show that the gender, age, and educational level are factors that have an impact on the knowledge of food safety among respondents. Regarding food safety practices, in general, the results show that the participants had good practices. Therefore, organizations should focus on educational programs, training, holding workshops and activities in public places such as malls, schools, and home visit to improve and increases food safety knowledge and practices.

The World Health Organization declared coronavirus disease 2019 (COVID-19) a pandemic in March 2020. Global efforts have been made to prevent the disease from spreading through political decisions and personal behaviors, all of which rely on public awareness. The aim of our study was to examine the effect of dietary habits on weight and physical activity (PA) during the COVID-19 stay-at-home order in Jeddah, Saudi Arabia. An online questionnaire was distributed using social media (Facebook, Twitter, Instagram, and WhatsApp) and email communication. A total of 472 adults (age range, 18-59 years), over half of the study population (68.0%) being females, 55.5% being between 19 and 29 years old, 15.0%-between 30 and 39 years old, and 11.2%-older than 50 years old, participated in the study. Our results indicated that the overall body weight was slightly increased among the 50+ age group (47.2%, p > 0.05), but it highly increased among the 30-39-years-old age group (32.4%, p > 0.05) as compared to before the pandemic lockdown period. Therefore, our results show that a significant difference (p < 0.05) was found for all the assessments: weight status, physical activity patterns, hours spent on screen time, homemade meals, and changes in dietary habits before and during the full COVID-19 curfew period. This study demonstrated that changes in eating habits were commonly reported among the participants who represented the full COVID-19 curfew period and that changes in eating habits and decreased physical activity led to weight gain.

Over the past two decades, the rapid rise of social media has revolutionized the way we communicate and share information online. Social media platforms are not now only used extensively by individuals but also by businesses, governmental agencies, educational institutions, and many other organizations to deliver information to the public and, in return, collect information from that same audience. The preliminary study presented here offers valuable insights into how social media may be used to improve food safety standards. Today, food safety is still a major health challenge in the country, which occasionally faces unsafe food supply chains, an increased number of food borne outbreaks, and poor hygiene education. Social media may be used as a very valuable tool for people to access important information and more knowledge about food safety. The limited-scope survey presented here was conducted over the western part of Saudi Arabia and included 295 individuals of both genders, among various age groups. Participants responded to an online questionnaire about their use of social media to obtain information about food safety. Results showed that social media was indeed a major outlet for individuals to access information on food safety, with the top-ranked social media platforms being WhatsApp (M = 2.99) followed by Snapchat (M = 3.72), YouTube (M = 4.08), Instagram (M = 4.46), and Facebook (M = 4.81). Additionally, we found that the most trusted sources of information was the Saudi Food and Drug Authority (72.6%) and the Saudi Ministry of Health (55.4%). Participants most frequently sought epidemiological information (52.5%), quantitative risk estimates (23.1%), and information on the various types of foodborne infections (15.3%); they preferred the information to be in video format (67.5%), articles (57.6%), infographics (55.3%). Trustworthiness clearly emerged from the survey as an important consideration for individuals when accessing food safety information on social media.
